Adam Ragusea’s New York Style Pizza

What better way to start than with pizza, and the video that popularized the trend of learning how to make the perfect New York slice in your own kitchen. The truth is most of us don’t have the kinds of super high heat ovens that are used in professional pizzerias, and so we can’t get it exactly right, but at the time of its original posting, Adam Ragusea’s pizza tutorial was one of the first, if not the first, meticulously developed guides on video, that at least got us to the right ingredients, the right tools, and the right way to think about making New York style pizza in a conventional home oven.

One of the more memorable lessons was on cheese, and that you should be looking for whole milk, low-moisture cheese (and don’t you forget it) if you want to get that authentic flavor. Pretty much all subsequent guides you’ll ever watch on making pizza, many of which are inspired by this one, make it a point to adhere to and highlight that one detail.

A year and some change later, Adam returned with an updated video, based on continued experiments, and adapted for ingredients and tools that might be expensive or hard to find.
